The simplest of salads is often the most satisfying. I made this one for my lunch today. It was refreshing and filling.
The Simplest of Salads
Try equal parts of cranberry juice (for a holiday flavor) , lemon juice and balsamic vinegar over fresh crisp romaine, honey crisp apple slices, cucumber and baby carrots. Coarse salt and pepper
Add the romaine, cucumber and carrots to a large bowl and toss together with the dressing. You could add a bit of olive oil if you prefer. Serve in a large pasta bowl with coarse or kosher salt and some fresh ground pepper on the side.
