Sauté 1″ pieces of okra in some light oil till they start to brown and set aside. In the same pan sauté onions green chillies and red pepper cut to 1″ pieces. Add 1/2 tsp turmeric, 1 tsp Rasam powder or vangibath powder and some dry roasted peanuts. When onions clear, add the okra back and add a large sprig of cilantro chopped and cook for few min. Add two chopped tomatoes and 1 cup of water and salt to taste. Simmer covered for 10 min. Serve with rice or chappati and a cup of plain yoghurt on the side.
Variation: Add two cups of plain yoghurt blended with cilantro and two ripe tomatoes to the cooked vegetables and mix quickly so the yoghurt does not separate.
