Moroccan Vegetable Tagine

Tagine refers to both a dish and the pot in which it is made. Stews made in a tagine are traditionally simmered over a low flame for a long time to allow the flavours to blend well. The conical lid ensures that condensation returns to the pot and prevents the ingredients from drying out. In this Moroccan-inspired tagine, a variety of vegetables are seasoned with an array of warm spices.

  • Prep Time : 20 minutes
  • Cook Time : 60 minutes

Instructions

1. In a large pot, heat oil and add spices. Warm on low heat till fragrant.

2. Add ginger and onions. Saute until onions are translucent.

3. Add vegetables, can of tomatoes, cilantro and apricots. Mix until thoroughly combined. Add water if necessary.

4. Bring to a boil. Cover and simmer for 1 hour.

5. Top with slivered almonds, sprinkle with more cilantro, if desired. Serve over couscous, quinoa or enjoy as is.tagine
