When we think of spaghetti sauce we usually imagine a rich and thick sauce that coats the pasta well. There are times when I enjoy a light broth-like sauce with lots of flavor. I made some for my daughter the other day and she enjoyed it so much that she had it for lunch and for dinner. I just made a different vegetable as a side dish for each meal and added a different salad.
Tomato Sauce with Mushrooms and Spinach
I make this sauce when I am in a hurry and need a 20 minute meal on the table. It's an ideal dish for that and i usuall make enough to save for another meal.
Heat the oil in a pan and add the onions. When the onions are 1/2 done, add the button mushrooms cut in half and add all the herbs and chili flakes. When the onions clear, add the tomatoes and 1/2 cup of water and bring to boil and simmer covered for 5 minutes. Add the spinach and cover again for 2 or three minutes. Stir and season with salt and pepper to taste. Add 1/2 cup of milk or half and half for a richer broth. Serve over your favorite pasta and sprinkle any grated or shredded cheese on top.
