Spicy potato with cabbage and baby kaleI have been keen on developing some potato recipes whcih do not call for fat and salt. It’s been quite easy to do that given the potatoe’s versatility.  Here is one that again takes but a few minutes to bring to the table. It’s economical, healthy, low cal and low fat and low sodium and just delicious. What more could you ask for?  It takes one pan and clean up is a breeze. You could serve it as an informal supper to friends with a crisp Riesling or a Pinot Grigio.

Spicy potatoes with baby kale and other greens

This dish is very easy to make and you can substitute available ingredients and local greens. I found a mix of baby kale and other tender greens in my organic vegetable market today and hence this dish for dinner. I would make a wonderful TV dinner on a cold night too

  • Cook Time : 10 minutes
  • Yield : 4-5 servings

Instructions

Temper the spices in the oil and add the peanuts and fry them for a minute. Add turmeric, asafetida and rasam powder. Add green chillies split in the center. Add the cabbage and peppers and stir for a minute or two. Then add the greens and toss them all together and sprinkle 1/4 stp of salt. Cover and cook on low heat for a minute and add the tomatoes and 2 tbs of water and cover and coook for 3 minutes. Now add the boiled potatoes cut in cubes and fresh lime juice and toss and cover and cook for one or two minutes.  Serve with a side of plain low fat or no fat greek yoghurt and some lemon or lime pickles.
