IMG_2037A warm herbed bread recipe comes to us form our newest guest chef, Vaishnavi.  Judging from this recipe, we will soon be seeing many more expert meals and dishes from her; and soon. We hope she will be a frequent contributor to these pages.

Easy Herbed Bread

Really simple and soft bread that's flavorful and quite easy to make.



IMG_2027Mix together flour, sugar, yeast, salt and herb (reserve some for garnish). Add in softened butter and very warm water and knead well to form a smooth dough. Keep wetting your palms in bearable heat to infuse the dough with the required warmth enabling yeast activation.


IMG_2028Knead the dough on countertop for about 15 mins until really soft and smooth. Dough will not be sticky at all - this makes sure gluten strands are formed well.

Place dough in a big greased bowl and cover the top with cling film. Keep in a warm spot for it to double up in size (takes about an hour). Usually, I keep the bowl inside the oven (turned off) with the oven light turned on.

IMG_2031Once doubled, turn dough onto a pan  and flatten out. Shape it the way you like it - can do rectangle or a circle or little balls like pull-apart rolls.. as you please

Sprinkle the top with remaining herbs, olives, garlic and spread some olive oil to prevent forming a crust.

IMG_2033Loosely cover with cling film and leave it for about 15-20 mins. Meanwhile, preheat oven to 375 degrees F

The dough would have risen a little bit more by this time. Just before popping it into the oven, sprinkle the top with some coarse salt and bake for 10-12 mins.

IMG_2036Very critical to keep watching as it can browned within seconds. Once done, remove from pan and let it cool on a wire rack. Cut into wedges and enjoy!
