Easy Herbed Bread
Really simple and soft bread that's flavorful and quite easy to make.
Mix together flour, sugar, yeast, salt and herb (reserve some for garnish). Add in softened butter and very warm water and knead well to form a smooth dough. Keep wetting your palms in bearable heat to infuse the dough with the required warmth enabling yeast activation.
Place dough in a big greased bowl and cover the top with cling film. Keep in a warm spot for it to double up in size (takes about an hour). Usually, I keep the bowl inside the oven (turned off) with the oven light turned on.
Sprinkle the top with remaining herbs, olives, garlic and spread some olive oil to prevent forming a crust.
The dough would have risen a little bit more by this time. Just before popping it into the oven, sprinkle the top with some coarse salt and bake for 10-12 mins.
