This is a colorful and unusual summer salad that can be a side with a formal dinner or a meal unto itself with some pita crisps or fresh bread and butter.

Carrots, lettuce and romaine

This is a delicious variation of the traditional South Indian Kosumalli. Toss the fresh salad ingredients with fresh lime juice and salt and pepper to taste and serve as a side dish. Alternately serve topped with plain greek yoghurt drizzled with a tablespoon of honey for a healthy lunch or main course.
