Vegetarian Tacos with a twist from the healthful guest chef Lavanya Krishnan. Virtually no prep time and the outcome is a healthy lunch. If you haven’t guessed by now you should know that Lavanya is a vegetarian foodie with a sharp eye on nutrition.
Black Bean and Avocado Tacos
This is a recipe that was passed on to me by my friend Radhika Iyer. I've excluded the cheese from the recipe because the freshness of these summer vegetables is enough to take my taste buds to heaven. What's more - this dish requires so little prep time and there is no cooking involved. If you're short on time and want a healthy lunch, these tacos are definitely worth it.
1. Mix all ingredients together except tacos in a bowl and season with salt, pepper and lime juice.
2. Warm tacos for 1-2 minutes on a skillet.
3. Scoop some filling into each taco and serve warm.
